Hey Guys! Hope you all are doing well. Today I'm going to tell you all that how to freeze strawberries. I know it’s been a while but this is going to be an ice short sweet little episode where you’re going to love it. And speaking of sweet this is what we ‘redoing here today we're going to be freezing strawberries. I had a user email me ask me what’s the best way to freeze summer berries like strawberries and stuff like that. If I want to use it all winter long. So in today's episode of food ethicist, we’re going to talk about how to prepare and freeze strawberries. The very first thing we've got to do is to wash these strawberries. You can put it in a drainer and put cool water to run all over it and to give them a good rinse. But I much prefer putting it in a bowl of water and moving them around a little bit. What that does and make sure it's sitting pretty high off the water in the bowl. Because what’s going to happen eyes move it along any sort of dirt debris or anything. It’s going to fall to the bottom of the bowl here and it's going to settle on the bottom. This way you can have nice clean fresh strawberries floating on the top here. If you had them in a container like a wire container they were sitting against each other. What will happen is as soon as they rinse some of the dirt may be caught between them. So best back put them in a bowl here and you’re good to go after that.

What we're going to do is the sort of leafy stem on the top we're going to trim that off and you can put it down on a chopping board. If it's easier for you go-ahead with your paring knife and cut it. After we've trimmed all these what are we going to do is it's all. How to freeze strawberries. We’re going to do next is to spread a couple of paper towels onto a cookie sheet. In my case here, I'm using my cutting board and I've gone ahead. I’ve trimmed all those stems the leaves off the strawberry. So all we're going to do now is to put them on to this paper towel here. But I'm hoping you’re able to see this the water here notice how cloudy became. And I'm down at the bottom. You can see a little bit of dirt and sand and stuff like that. And this is why I much prefer watching them in a bowl of water like that.

Now that my berries are all dried what the next step is this and you're going to get a plate. All you're going to do is to put these berries on the plate. And the reason why we're going to put it on the plate as it is here is that we want these berries to freeze. How to freeze strawberries. If I was to put them in my ziplock bag at this point and stick it in the freezer. What would happen is they may touch and it may have been the chance of sticking together. So you won't have individually frozen berries you may have a big old Club. So now what I'm going to do? I’m going to put this in the freezer and let that freeze until it's hard. It took over an hour or about an hour and a half these are all frozen. Now so what I have you know is my freezer bag and all I'm going to do is to pour them into the freezer bag. And again remember the reason why we froze them individually is that they don’t stick together. Once we have them in the freezer search in the bag now and that’s going to seal it up. I get as much of that air out of it as I can and there you go guys. It's a wicked way to store strawberries in the freezer for the winter. It's going to stick this back into the freezer and it's good for about a year or so you an entire winter. At least you'll have fresh strawberries.

Can I Freeze Homemade Strawberry Jam?

Now! I'm going to tell you all that can I freeze homemade strawberry jam? We're going to make some of our fresh strawberry jam. We're going to make freezer jam made out of our fresh-picked strawberries. But something can be used for any other berry that we grow throughout the season. Now I'm going to tell you how to follow the recipe. So what we're going to do today is get all the ingredients ready to make our strawberry jam. This one's simple. It includes the Box of pectin, some fresh lemon juice and some sugar and of course your strawberries. Now we take our strawberries that have the stems on. We’re going to remove the stem all the stem and we're going to put them in a colander and run fresh water over them. Swirl them around and get them nice and clean. Then we're going to take those strawberries and we're going to put theming. can I freeze homemade strawberry jam? I like to use a kettle that has nice square edges down the side. You’re going to take and you're going to mash up the fruit until you get just a pulpy consistency. Nothing hard to do about that. Now that we've got our berries all in our kettle here we'll use the potato masher. It takes about one to two minutes just to get a nice consistency. 

Then we’re going to add our fresh squeezed lemon juice. I've got a quarter cup here. I’m adding to the berries and you want to blend that right in with the smashed berries. Then the next thing that we’re going to do is start adding our pectin. And it's always a good idea to go nice and slow on adding the pectin not all it at one time. Just keep blending in just a little bit at a time. Add a little more, blend it in. I'm going to do a little bit more and remember to use the whole package. This is no time to scrimp and try and save to make an extra batch. You want to measure exactly like the recipe says to make sure that you're jam turns out nice and sweet. This is the pectin that I like to use. This is what my mom used and this is what I grew up knowing how to make strawberry jam. It's a product of sure gel and we have it available in our farm market year-round. Now, I want you to keep stirring and we're going to stir this every five minutes till we got 30 minutes on the clock done. And that will make sure that the pectin is thoroughly dissolved in our jam. Now that our pectin is set for the 30minutes just like the recipe says we’re going to go ahead and add our sugar now.

I’ve removed the potato masher that I used to crush my star strawberries and I went to using a spatula. That way you can get every little corner and every little bit stirred in with the sugar. I know this looks like a lot of sugar but the thesis exactly what the recipe says. Pretty soon it takes about oh five more minutes of stirring we get all that sugar dissolved. Then we're going to be able to have a taste test and get it put in our jars. Now we've got this sugar pretty well stirred in here. And what we're gonna do is take a little sample of the texture between your tongue. and the jam will let you know whether the sugar is dissolved. Mm, that's delicious! We are ready to put it in the bank. Okay, the snow we're ready to put in our jar and jar yes I prefer a glass jar. It’s reusable and easy to clean. Make sure you run them through your dishwasher before you put your jam in them.

All we have to do is pour into the jars and you can see this is taking about one cup of jam. Our recipe here today is going to make seven cups of jams. So seven of these size jars or we can put it into our pint which would make three and a half. can I freeze homemade strawberry jam? Putting it in my glass jar I'm gonna leave one-half-inch headspace because I’m going to freeze it in my freezer. Now we’re going to fill up our jars. Remember to leave that half-inch headspace. Best Way To Freeze Rhubarb Strawberry Pie

Now, I'm going to tell you the best way to freeze rhubarb strawberry pie. Afresh fruit pie is one of the joys of summer when farmers' markets are brimming with plenty of ripe sweet fruit. This recipe for rhubarb and strawberry pie takes advantage of that bounty. It was submitted by all recipe members who describe it as a delicious tart and sweet combination. You'll need a nine-inch double pie crust. Either made from scratch or use a refrigerated pre-made crust. Preheat your oven to 400 degrees then in a large bowl add one cup of sugar and a half cup of all-purpose flour. Stir it together and set the bowl aside. Next, trim the ends and any leaves from one pound of fresh rhubarb. Chop it into quarter-inch pieces add the rhubarb to the goal wash two pints of fresh strawberries. Now we'll hold them we're using a small melon baller here if they're small leave them whole. And if you have mixed sizes quarter the larger berries.
